Cubans love their rice and egg. Cuban eggs is a popular
dish, easy to make and very few ingredients. It is a smart way to
present the hard boiled eggs in an exotic way.
This dish is ideal for a brunch or a breakfast.

Recipe for Cuban Eggs
Ingredients for Cuban Eggs
- 4 eggs (hard boiled)
- ¼ + ¼ cup cheddar cheese (grated)
- 1 tbsp milk
- ¼ cup capsicum (finely chopped)
- ½ cup onion (finely chopped)
- ½ cup tomatoes (finely chopped)
- 1 tsp olive oil
- 1 tsp butter
- 2 cloves garlic (finely chopped)
- Salt and pepper to taste
Cut eggs in half lengthwise.
Remove yolks in a small bowl, mash it and add one fourth cup of cheddar cheese, milk, salt and pepper. Blend it well with a fork.
Fill the egg whites with the above mixture, approximately one tablespoon for each.
Place egg whites in a baking dish and set aside.
Place a pan over medium heat. Put the oil and butter in it.
Add garlic and onions. Saute till onions become translucent.
Add tomatoes. Saute for one minute. Season with salt and pepper.
Add capsicum and sauté for another minute. Remove from heat.
Tip this salsa-like mixture over the egg whites. Top it with grated cheese.
Bake in a preheated oven at 200 deg C for 15 to 20 minutes.
