Tahini or Tahini paste is widely used in Middle Eastern
cuisine. It is made from lightly toasted sesame seeds which imparts a nutty
flavour to it.
Tahini is an important component of many Middle Eastern
preparations like hummus, baba ganoush, tahini sauce and others.
Toasting the sesame seeds helps to release their oils. Olive oil is added to enhance its flavour and also increase its shelf life.
I have used the organic variety of sesame seeds, hence the colour. White sesame seeds will yield you white tahini paste.
Recipe for Tahini
- 1 cup sesame seeds (til)
- ¼ cup extra virgin olive oil
How to make
Lightly toast the sesame seeds on medium heat for 2 minutes.
Colour of sesame seeds should not change. Alternatively it can be microwaved
for 1 + 1 minute. Let it cool.
Transfer to a mixer jar. Grind it to get a fine powder.
Add olive oil. Blend it well to get a homogenous mixture.
Store it in a glass bottle in refrigerator. It can be stored
for two months. Use as required.
